I should be able to see only their latest subreply. Most recent subreply to oldest. I hit refresh when I'm ready for updates. If I want to see all of somebodies subreplies I will click their username to see all the threads they have created.

I think you can follow/unfollow people. I agree though, it would be nice to see more than a list of usernames in the 'following' page
